Banoffee Pie - sugar, dairy, wheat and gluten free and raw to boot!
When I first changed my diet and lifestyle it was a case of change or die. That might sound extreme but that was how I felt and I threw myself head first into my new journey.
For me I had it easy, in as much I had a great incentive to make the necessary adjustments. I stopped eating sugar, dairy and a huge number of other things. My beloved Galaxy was out the window as was my favourite dessert Banoffee Pie. I never in a million years imagined that you could create something that was dairy, sugar, wheat and gluten free that tasted even half as nice. Oh I wish I could go back and talk to myself a few years ago and whisper in my ear "you can make Banoffee Pie without D,S,W and G and it will taste even better".
Now I am not saying this is a pudding to eat every day because of your insulin levels and although it doesn't have added sugar there is fruit in it so you are getting fructose, but I am saying that the goodness is off the chart as well as the taste. You certainly can't say the traditional version has any health benefits apart from the bananas. In my version the toffee, the bananas, the crumbly biscuit base topped by the most divine coffee and vanilla cream is out of this world and it is all natural and made using wholefoods. It is raw too and can be made in around 20 minutes just using a food processor. The bananas are a pre biotic and feed the good bacteria in your gut as well.
